Pantry Cooking!

Well, it's been a long time again, but I think I will have some time in the next month or two to focus on this. I'd like to make it more interactive though. Maybe a facebook page to go along with it? We'll see. But, I suspect in the next month or so we might all be looking for creative ways to use pantry and freezer staples - and share other "stay at home" tips. 

So, my latest post...what did you stock up on in preparation to be homebound for a while? I always have lot pantry staples (rice, beans, pasta) and frozen veggies and proteins from sales. And, this week the grocery store had pork shoulder roast (.99/lb) and chicken breast (1.68/lb) on sale. So I stocked up on those. I think I will make the pork tomorrow, because I bought coleslaw mix to go with it, and then make some egg rolls with the left over coleslaw mix and pork. 

Also, since St. Patrick's Day is this week, I bought corned beef. I don't like cabbage with that, but I have carrots and potatoes and swiss cheese, sauerkraut and thousand island dressing (but no rye bread!) for leftover ruebens. 

What are your plans? What food is a must have?
